Sweet potato fries with spicy mayo

An autumnal dish

Ingredients:

  • 600g Sweet Potatoes
  • 1 tsp Salt
  • 1 tsp Mixed herbs
  • 1/2 tsp Garlic granules
  • Olive oil

For the Mayo

  • 2tbsp Mayonnaise
  • Sriracha, as much as you like
  • Harissa powder, as much as you want

Method:

  1. Preheat the oven to 180 degrees celcius (fan
  2. Peel the sweet potatoes and cut them into batons of your preferred size
  3. Place them onto a roasting tray and or olive oil over generously, add salt, pepper, garlic granules, mixed herbs and then make sure they are evenly coated
  4. Roast in the oven for 40-45 minutes
  5. Mix the mayonnaise, sriracha and harissa together in a pot and put aside for later
